What is your favorite cheese to go into mac n cheese?

My mac n cheese always gets rave reviews (not bragging!) I use a mixture of smoked gouda, mild cheddar,sour cream, er and onion, then... I crush up an entire bag of sour cream and cheddar potato chips into tiny bits and sprinkle over top.
